Dhal curry

Since we have changed a traditional nutrition to a healthy plant-based one, we like lentils very much. There are different types of lentils, but every tipe is good and has its own taste.

For example, in my previous recipe with lentils I used red one. (4 article. Lentil soop masur dal).

Lentils are very popular in Indian cuisine. Here is the easy dhal curry recipe. It’s quick to make, delicious and extremely nutritious. Apples create a specific note in this recipe.

First some information about lentil’s benefits:

  1. lentils are high in fiber, that’s why they improve digestion
  2. can help to keep your blood sugar stable
  3. lentils can provide you with additional energy because of complex carbohydrates, fiber and iron
  4. can help to improve your heart health
  5. the main aspect for vegans/vegetarians is that lentils are goog source of plant protein. One cup of lentils provides you with 36% of recommended daily protein intake
  6. lentils are low in calories. So they help you lose weight in a healthy and nutricious way

Ingredients:

  • 1 cup lentils (for this recipe I usually use geen lentils)
  • 1 medium onion
  • 1 big apple
  • 1 tsp lemon juice
  • tomato paste or ketchup - 1tbsp
  • 1 tsp curry powder
  • 1/2 tsp ginger powder
  •  a dash of salt
  • pepper to taste
  •  2 cups of vegetable broth or water
  • cooking oil (I use coconut one, it has high smoke points).

Put some oil in a saucepan, saute onion (sliced in half rings) with pepper, salt, ginger powder, curry powder, lemon juice and tomato paste (ketchup). Instead of tomato paste or ketchup sometimes I use one diced  tomato.

Add washed lentils and 2 cups of vegetable broth or water.  Simmer over medium heat for 20 minutes.

Slice or dice the apple and add to the lentils.

Stew until the lentils are soft. It’s about 20-30 minutes. Add some water if you need.

Then cover and turn off the heat. You should let the lentils rest for 30 minutes.
