Beet, bean and apple salad can be prepared at any time of the year. All ingredients in the salad are the simplest, but the taste is wonderful. Your kids will eat this salad with great pleasure!
Apples go well with sweet beet, beans makes salad nutritious and the dressing makes the salad spicy.
My son doesn’t like salads with fresh beet. He even doesn’t like the taste of fresh beet in the fresh-squeezed juice. But I came up with the idea of a new salad and Egor really likes it.

Ingredients:
If you use dry beans, then soak them overnight in clean cold water. Boil them until cooked. Soaked beans are cooked 2 times faster - about 1-1.5 hour.
It’s preferably to use dry beans, because canned food acidifies the body.
Beans are great source of dietary fiber and are considered a vegetable protein. They are low in fat and saturated fat but high in other nutrients, including calcium, iron, zinc, folate and potassium.

Boil the beet until tender about an hour. Peel the cooled beet and cut it into cubes.
Chop the parsley (we didn’t use it this time).
Cut the apples into cubes.
Dressing:
For dressing combine olive oil with apple cider vinegar, salt and sugar. Add mustard to our dressing and mix.
Then mix the beet with the dressing and leave for 5 minutes. This is necessary in order to make the beet less colored other components.
