Vegan gluten free pie

This pie is a vegan-friendly, naturally sweetened and requires just 8 ingredients. Dairy and gluten free. You’ll definitely like it!

When 3,5 years ago we have changed a traditional diet to a healthy plant-based nutrition, we were faced with many questions. One of them was what to do if our child asked for dessert. Sometimes we wanted something tasty too.

There was no any health food store in the city where we lived. It was impossible to find vegan desserts in traditional stores.

I began to look for new recipes and try them. Especially we liked this one. It’s so easy to prepare, requires minimum simple and healthy ingredients and ofcourse delicious.

Ingredients:

  • buckwheat flour - 1 glass
  • corn flour - 1 glass
  • 2-3 carrots
  • 2-3 bananas
  • 3-4 tbsp olive or other oil
  • favorite dried fruit and nuts
  • 1 tsp soda or baking powder
  • cinnamon, ginger, vanillin - at will

Put 1 glass of buckwheat flour in a dry bowl. You can make buckwheat flour yourself. To do this, grind buckwheat in a coffee grinder or you can buy it here.

Then put 1 glass of corn flour in the same bowl. You can buy it here.

Or you can use any other type of flour: rice flour, coconut flour and so on.

Add 1 tsp soda or baking powder, cinnamon, vanillin and mix them all.

Grate bananas on a coarse grater, carrots on a smaller grater.

Cut dried fruit if necessary. It’ll be tastier if to add some candied fruit. Put them in a bowl with grated bananas and carrots.

Add to the bowl with dried fruit, carrot and bananas olive or other oil. I use coconut one (it has high smoke points). You need to melt it before. You can buy it here.

Mix dry and raw ingredients. If the consistency is too thick, you can add any vegan milk you like, coconut cream or some water. I the consistency is to liquid, then add some flour.

Put the dough into a pie dish and bake it in a well-heated oven for 40 minutes. The required temperature is 180 degrees Celsius or 356 degrees Fahrenheit.

Let it stand for a while after cooking.
