Buckwheat pancakes

If you know, buckwheat has various health benefits. The most important for people on healthy plant-based nutrition is that it’s a source of vegetarian protein. Buckwheat is also rich in such vitamins as: thiamin, riboflavin, niacin, folate, vitamin K, vitamin B-6.

Besides, buckwheat is rich in fibers, that’s why it improves digestion.

It’s gluten free and non-allergenic.

There are also some other benefits, especially in raw buckwheat. That’s why people in a raw diet use it in a great number of meals: smoothies, sauces, salads, even in the cake’s shells.

In Russia we can find 2 variants of buckwheat: green buckwheat (original) and steamed buckwheat (brown). In most shops steamed buckwheat is sold. It’s required to be heat treated in order to increase shelf life of the product. It’s a dead food. People on a raw diet use only green buckwheat.

Today we’re gonna cook buckwheat pancakes.

Ingredients:

  • 1.5 cup of buckwheat (original)
  • 2-2.5 cups of water
  • cumin – ¼ tsp
  • salt – ¼ tsp
  • soda – ¼ tsp
  • turmeric – ½ tsp

Soak the buckwheat overnight. Rinse several times and drain the water. Mix the buckwheat in a blender with spices, soda and salt. You should make a batter, like pancakes.

Bake in a pan with a drop of oil (we use coconut one).

Vegetables and greens cut into strips and wrap in the pancake.

You can use different vegetables, for example: an avocado, a cucumber, a tomato, a pepper.

You can also add some vegan sauce or make favorite one yourself.
