Avocado vegan sushi rolls

When you want something unusual, but there is no opportunity to go to a cafe, you can cook vegan sushi rolls at home.

It’s worth noting that cooking them yourself you can use only natural ingredients. Another benefit - homemade sushi rolls are much tastier. It’s pretty simple once you get the hang of it.

For homemade sushi rolls I use only brown unpolished rice. And the reason is that every grain of brown rice is a living rice seed, with the bran and germ retained. That’s why this rice is rich in vitamins and minerals. Unlike white rice, this one is also rich in fibre that improves digestion.

Brown rice has more vitamins B complex and E than white one. Such minerals as calcium, magnesium, zinc and chromium are also included.

Ingredients:

  • 1 cup brown rice
  • 2 cups water
  • 1 ripe avocado
  • 5 nori sheets
  • ½ tsp salt
  • 1 tbsp sugar
  • juice of ½ lemon

Put brown rice in a saucepan, add 2 or more cups of water and bring to a boil. A process of cooking brown rice is much easier than of white rice. You don’t need to follow strictly such moment as the amount of water for the right consistency of rice. You just have to boil the rice until tender. It will take about 30 minutes.

Once the rice is cooked, remove from the heat and drain remaining water. Then I cover the saucepan with a dry towel and close a lid. Leave for 15 minutes, so that the towel absorbs excess moisture.

Mix lemon juice with sugar and salt, pour it on rice and stir. Of course, you can use rice vinegar instead. Set aside to cool.

Lay the nori sheet on the bamboo sushi mat. Spread the rice onto the sheet with your hands, leaving about 1/2 inch of nori empty at the bottom. Crush a few grains of rice at the other end of the nori or use a little water to help seal. Put some strips of avocado at the end of the sheet closest to you. Wrap the roll in a tube and slice into 8 slices.

Enjoy your sushi rolls with soy sauce!
