Do you know about health benefits of pumpkin?

Pumpkin isn’t only a healthy product, but also tasty.

Ingredients:

  • Pumpkin puree – 1 cup
  • Wholegrain, spelt or wheat flour – 1 cup
  • Oatmeal (ground) – ½ cup
  • Soda – 1 tsp
  • Curry powder – 2 tsp
  • Dry ground ginger – 1/3 tsp
  • Nutmeg – ¼ tsp
  • Coconut or olive oil – 2 tbsp

I don’t use any sugar, but you can add some sweeteners (coconut syrup, Jerusalem artichoke syrup, coconut sugar, etc.).

You can buy canned pumpkin puree, but if you have powerful blender it’s better to use natural ingredients. In this case you need to cut raw pumpkin with cubes and make a puree.

If your blender isn’t so powerful, then cook the pumpkin (5-7 min) to make it a little softer.

Add oil (you need to melt the coconut butter), sweetener (if you want) to the pumpkin puree.

Sift wholegrain (spelt or wheat flour) to another dish. Then add oatmeal.

Add soda, curry, ginger, nutmeg, dash of salt (if you want) to the dry components.

Mix dry and liquid mixture. Form small balls and place on a silicone mat. Sprinkle the buns with the pumpkin seeds or flaxseeds.

Bake it in a well-heated oven for 35 minutes. The required temperature is 180 degrees Celsius or 356 degrees Fahrenheit.

Undoubtedly, these buns are delicious, but try to eat more raw meals and especially more fruit and vegetables.

In Sochi there are tasty and healthy local mandarines, persimmon and apples. We buy them every week at the local market on Yan Fabritsius street.
